I LOVE shrimp because it is so convenient for a quick fix, healthy dinner....and you can get large bags of it frozen to have on hand all the time. I like getting the cooked, ready to go with only tails on version. All it takes is a few minutes thawing in some water and you are ready to eat or cook them up and create something different very easily.
Here is a quick fix idea:
(Makes 4 servings)
HEALTHY CLEAN MEXICAN SHRIMP
Ingredients:
- 1 pound large, pre-cooked shrimp – thawed if frozen
- 2 tablespoons taco seasoning (homemade) ingredients:
*1/2 teaspoon cayenne pepper
*1/2 teaspoon onion powder
*1/2 teaspoon garlic powder
*1/4 teaspoon black pepper
*1/4 teaspoon chili powder - 1 tablespoon olive oil (or any oil you prefer)
- Juice of 1 lime
Directions:
- In a skillet, cook the shrimp in the olive oil and sprinkle on the spices in the last few moments of cooking.
- Mix well and serve.
- Sprinkle the lime juice over the shrimp just prior to serving.
