It is already here, week two of Advent ~ PEACE!
Having peace during this time of year may seem crazy or ridiculous. All the extra demands we put on ourselves can lead us to be a little less than peaceful. I do appreciate those special days when I take a step back and enjoy the moment. It might not be the perfect Hallmark moment of sitting in front of a fire and sipping hot cocoa, however having that inner peace does bring a certain calmness to stressful situations. I have to remind myself of this often....that's because I tend to be a impatient person who really has to focus on having a peaceful heart:)
The GREAT NEWS is that God has "peace instructions" for us found right in His word.
" Rejoice in the Lord always. I will say it again: Rejoice! Let your gentleness be evident to all. The Lord is near. Do not be anxious about anything, but in every situation by prayer and petition, with thanksgiving, present you requests to God. And the peace of God, which transcends all understanding, will guard your hearts and your minds in Christ Jesus." Philippians 4:4-7
When we focus on Him and know that He can make everything manageable, those stresses and anxieties will be left leaving us with an inner calmness and PEACE!

It's the 1st day of Advent....the REASON for the season
Today marks the 1st day of Advent and the anticipation for Christmas. It can be a crazy time of year, that often gets me stressed and wondering if I will get it all done. When this happens, I really try and focus on the real reason for the season...JESUS!
I love the symbolism of the Advent wreath: evergreen wreath that represents the eternity of God as the base because God is the foundation of all good. And for today, the 1st purple candle to represent HOPE.
I thought these weeks leading up the the best birthday celebration ever, I would share a great devotional I found from the amazing singer Mandisa.

"It seems the minute Halloween is over and kids are either bouncing off walls or groaning from sugar-induced stomachaches, retail stores rush into overhaul mode. Out goes decorative pumpkins, fall paper foliage, and other autumn-colored accents. In comes a blinding array of red and green product. Holiday music blares through speakers. Aisle shelves are suffocated by wrapping paper, decorations and batteries, flanked by brazen signs promising to beat competitors’ prices.
To some, it can be groan worthy. Seeing Christmas décor plastered all over stores brings with it a sense of doom. It’s easy to envision long lines at the check out counter, unbearable traffic, the hassle of battling crowds for the perfect gift, and rising credit card bills.
And it’s just as easy to brush past the magic. The wonder. The joy. The miracle. The celebration.
Let’s not forget

Remember this
Jesus is the reason

Every year we are warned against the sins of commercialism. We are told to stop focusing on presents, decorating, and spending money. Point taken. But it can be tempting to get distracted by the warnings ad nauseam and miss out on the joys of celebrating.
Heaven and earth proclaim
Come on, let’s celebrate
It’s Christmas
Think about this. Jesus wasn’t born in the best of circumstances. The political rule was like a dictatorship. Most people were struggling to get by financially. The folks who were waiting for Jesus expected nothing less than a Rambo-like warrior. So Jesus shows up in the midst of shaky times, deflating some expectations, and with barnyard animals and the stench of manure accompanying his teenage mom in labor. Not the best kind of set up for a promised Messiah.
But wait. It was time to celebrate!
Heaven rejoiced. Angels whooped and hollered, shouting out praises. The angel of the Lord appeared to unassuming shepherds and said, “I bring you good news that will bring great joy to all people” (Luke 2:10 NLT). Good news and great joy! Then a host of other angels came on the scene and joined the festivities shouting, “Glory to God in the highest heaven, and peace on earth” (Luke 2:14 NLT). It was a time of worship. Praise. Thanksgiving. Celebration.
So instead of feeling condemned, annoyed, or frustrated by overzealous retailers, mad shoppers, or Bah Humbug-ers, celebrate! Celebrate Christmas with a spirit of adoration and joy. Celebrate by stringing up twinkling lights on your front door. Celebrate by humming the tunes of Nat King Cole and “Silent Night.” Celebrate by giving to those in need.
If you need to, dial back your trips to the mall and spending habits. And, of course, keep your perspective in check. But don’t let the grumblings of commercialism keep you from celebrating the One who came to give you the greatest gift—eternal life."

Slow Cooker White Bean Chicken Chili ~ HEALTHY!
It is a cool, raining day that just makes you want to cuddle in. Of course this got me to thinking about yummy warm comfort foods :), so what can be more comforting than warm bowl of chili! I've made this now a few times, and as always I have to have it family approved....and it has qualified! My hubby and girls have all asked for it, and have usually had more than one bowl at a meal. I hope you and your family enjoy it too!
Sprinkle chicken with salt and pepper then place it in the bottom of the Slow Cooker. Then add the onion, jalapeno, garlic, oregano and cumin on the top of the chicken. Next add white beans and pour the chicken broth over everything. Cover and cook on low for 6-8 hours or 4-6 hours on high.
Shred chicken and stir before serving. Sprinkle with cheese or greek yogurt in you desire.
- 1 pound of boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium onion, chopped
- 1 jalapeno pepper, seeded and chopped (optional)
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 4 garlic cloves, minced
- 2 cans (15 ounces each0 white kidney or cannelloni beans, rinsed and drained
- 3 cups fat free chicken broth
- optional garnishes: low fat shredded cheese, plain greek yogurt

How is being a Christian like being a pumpkin?
For the past 5 years my husband and I have had a pumpkin carving party. It has grown to where we have over 100 kids and parents come share in the fun. A special friend shared this picture with me, and I just had to share it too. It gave me a new perspective on carving pumpkins.

Pumpkin Pancakes
I LOVE fall and the beautiful weather that comes with it. Cool mornings and evenings, along with unbelievable colors that seem to explode on the trees and landscaping.
I don't know why I wait until this time of year to make these.....but I'm always glad I do. I generally make a double or triple batch, fridge or freeze the extras, and have them ready for a quick breakfast by warming up in the microwave or toaster oven.
Pumpkin Pancakes:
1/2 C canned pumpkin
1/3 C liquid egg whites I use Egg Whites International
1/4 C almond flour
1 scoop vanilla whey protein powder
1/2 tsp pumpkin pie spice
Few drops of liquid stevia
Combine ingredients and cook on a skillet with non-stick spray or coconut oil.
I like to eat my plain, however a little peanut butter, fresh fruit or sugar free syrup is tasty too:)

Holy Guacamole!
Yummy yummy yummy! I LOVE avocados and I LOVE guacamole:)
Although avocados are a fat, they are considered a good fat...monounsaturated fat. These fats promote the health of your heart, and have been proven to help speed your basal metabolic rate (BMR). This is the rate at which calories are burned at rest! Eating food that increases your metabolism....WOOHOO!
One cup of sliced avocado has 234 calories, 21 grams of fat, 12 carbohydrates, 10 fiber, and 3 protein. Add these fresh ingredients and you have a healthy dip.....if you don't eat a bag of chips with it:) LOL
3 Large Hass avocados ~ peeled, seeded and mashed
1 lime ~ fresh squeezed
1 minced garlic clove
1 jalapeno ~ seeded and finely chopped
1/4 C. fresh chopped cilantro
1 tsp. salt
1/4 C. red onion ~ finely chopped
Mix all ingredients and ENJOY!

The hot days of summer are here! Great grilling time with a party pool, patio or lake time is what our family LOVES:) Here is an easy appetizer you can make quickly, or ahead of time that is yummy....and it has some veggies too! July "Jumping" Challenge

area you are working. Plyos have been used with athletes to help improve performance, especially when it comes to both speed and power. One thing you want to watch carefully is to try and land softly. No need to add extra force or pressure on your joints....just on your muscles.

Individual 7 layer dip
Here's a great way to serve 7 layer dip at a party that can be easily transported in a cake pan or muffin pan. Layer the ingredients as listed in a clear disposable cup and ENJOY!
- Black beans or refried black beans
- Guacamole
- Greek yogurt (I like Fage)
- Salsa
- Light colby jack cheese
- diced black olives/tomatoes/green onion
- Chips
Giving life perspective
I am finally getting back to my home life and routine again since my mission trip to Bolivia. It was the most intense emotional experience of highs/lows I have ever been on. To see all the eyes that held hope, love and hurt ~ as well as being touched by all my senses is what I will forever remember. There are just so many stories to tell and share. I believe this one woman I witnessed gave me the vision of seeing and hearing Faith and Hope in a place that can be so uncertain...
A home we visited was of a women and her children. She left an abusive husband and came to Warmi Kaya where she learned how to make beautiful scarfs. She has now been able to provide for all her children with selling these and other items....and her oldest is graduating high school next year! They live in a modest one room home with 2 beds for 5 people to sleep, dirt for a floor, no running water BUT a testimony that Christ gives her strength on a daily basis with her prayer and devotional time to Him. I get spirit bumps every time I think of her and remember her saying this loud and clear. I feel so thankful and humbled that I was able to spend a few moments with her.

Easy Grilled Asparagus
I love grilling foods. It is usually quick and not much of a clean up for the kitchen! BONUS
Here is an easy 3 ingredient, 4 if you include the cooking spray, recipe for asparagus.
1. Rinse a bunch of asparagus and trim the ends off(until the white part is gone) and peel lower 1/3 away
2. Spray asparagus with cooking spray (I use olive oil spray) until evenly coated
3. Sprinkle with salt
4. Grill on medium high for 2-3 minutes each side
5. Serve immediately with a drizzle of balsamic and ENJOY!!

CLEAN EATING Chocolate Banana ice cream!
OMGOODNESS!!! I am so excited about this ice cream!! I created this off a recipe I found from The Gracious Pantry ~ CHOCOLATE BANANA ICE CREAM!
This is so creamy like soft serve only its packed with protein. The sugar and carbohydrate calories are mainly from the bananas, however you will get fiber and lots of GOOD vitamins and minerals that you don't get from ice cream.
Here's how I adjusted the recipe and the nutritional value:
1 Medium Frozen Banana
1 scoop of chocolate protein powder
2 TB Walden Farms Chocolate Syrup
1/4 C. Unsweetened Almond Milk
Place all ingredients in a food processor and blend, scrape down sides and repeat until smooth.
Is best if served immediately and not frozen.
Calories: 223 Carbs: 29 Fat: 4 Protein: 26 Fiber: 3 Sugar: 14

BBQ Chicken Quinoa Salad
I am so excited about this AWESOME recipe! I found it from one of my favorite blogger: Iowa Girl Eats:) Thank you for this YUMMY and HEALTHY recipe.
Quinoa is truly a SUPER FOOD!! Here are some facts about quinoa....just in case you need a reason other than it tastes great to eat it:)
1. Quinoa is one of the most protein-rich foods we can eat. It is a complete protein containing all nine essential amino acids.
2. Quinoa contains almost twice as much fiber as most other grains. Fiber is most widely known to relieve constipation. It also helps to prevent heart disease by reducing high blood pressure and diabetes. Fiber lowers cholesterol and glucose levels, may lower your risk of developing hemorrhoids, and may help you to lose weight (it takes a longer time to chew than does other foods because it makes you feel fuller for longer and is less “energy dense,” which means it has fewer calories for the same volume of food).
3. Quinoa contains Iron. Iron helps keep our red blood cells healthy and is the basis of hemoglobin formation. Iron carries oxygen from one cell to another and supplies oxygen to our muscles to aid in their contraction. Iron also increases brain function because the brain takes in about 20% of our blood oxygen. There are many benefits of iron; it aids in neurotransmitter synthesis, regulation of body temperature, enzyme activity and energy metabolism.
4. Quinoa contains lysine. Lysine is mainly essential for tissue growth and repair.
5. Quinoa is rich in magnesium. Magnesium helps to relax blood vessels and thereby to alleviate migraines. Magnesium also may reduce Type 2 diabetes by promoting healthy blood sugar control. Other health benefits of magnesium include transmission of nerve impulses, body temperature regulation, detoxification, energy production, and the formation of healthy bones and teeth.
6. Quinoa is high in Riboflavin (B2). B2 improves energy metabolism within brain and muscle cells and is known to help create proper energy production in cells.

Serves 4
Ingredients:
1 cup quinoa, rinsed very well
2 cups chicken broth
2 chicken breasts
salt & pepper
2 ears corn, shucked (or 1 cup corn kernels)
1/2 cup black beans, drained & rinsed
1/2 cup shredded sharp cheddar cheese
1/4 cup chopped fresh cilantro
1/4 cup plain Greek yogurt
1/4 cup BBQ sauce (plus more for chicken)
Directions:
1. Rinse quinoa very well in a fine mesh sieve under cold running water. Combine with the chicken broth in a saucepan then bring to a boil. Place a lid on top, lower heat to medium-low, and cook until quinoa is tender, about 20 minutes.
2. Meanwhile, season both sides of the chicken breasts with salt & pepper, then grill over medium-high heat for 4-5 minutes a side, or until no longer pink in the center. (Alternatively you could poach the chicken, or use leftover or rotisserie chicken.) Add corn to the grill at the same time, and rotate every couple of minutes to evenly char on all sides. Remove chicken and corn to a plate and let cool slightly. Shred or cut chicken into cubes, then mix with enough BBQ sauce to coat. Slice kernels off the cob.
3. Mix together Greek yogurt and BBQ sauce in a bowl. Evenly divide the cooked quinoa, shredded BBQ chicken, grilled corn, black beans, and shredded cheese between four plates. Drizzle with yogurt and BBQ sauce mixture, then garnish with chopped cilantro.
Quinoa is truly a SUPER FOOD!! Here are some facts about quinoa....just in case you need a reason other than it tastes great to eat it:)
1. Quinoa is one of the most protein-rich foods we can eat. It is a complete protein containing all nine essential amino acids.
2. Quinoa contains almost twice as much fiber as most other grains. Fiber is most widely known to relieve constipation. It also helps to prevent heart disease by reducing high blood pressure and diabetes. Fiber lowers cholesterol and glucose levels, may lower your risk of developing hemorrhoids, and may help you to lose weight (it takes a longer time to chew than does other foods because it makes you feel fuller for longer and is less “energy dense,” which means it has fewer calories for the same volume of food).
3. Quinoa contains Iron. Iron helps keep our red blood cells healthy and is the basis of hemoglobin formation. Iron carries oxygen from one cell to another and supplies oxygen to our muscles to aid in their contraction. Iron also increases brain function because the brain takes in about 20% of our blood oxygen. There are many benefits of iron; it aids in neurotransmitter synthesis, regulation of body temperature, enzyme activity and energy metabolism.
4. Quinoa contains lysine. Lysine is mainly essential for tissue growth and repair.
5. Quinoa is rich in magnesium. Magnesium helps to relax blood vessels and thereby to alleviate migraines. Magnesium also may reduce Type 2 diabetes by promoting healthy blood sugar control. Other health benefits of magnesium include transmission of nerve impulses, body temperature regulation, detoxification, energy production, and the formation of healthy bones and teeth.
6. Quinoa is high in Riboflavin (B2). B2 improves energy metabolism within brain and muscle cells and is known to help create proper energy production in cells.

May Challenge Time!

Each day follow the number of reps you have to do and GO FOR IT! It doesn't matter if you get 1 or all the reps asked for, I just want you to be consistent.

YES, YOU CAN!
Have you ever had a "God Thing" happen to you?? After what I just experienced yesterday and just posting about food being our friend.....I had to share.
Yesterday I met with the group of kids who are special needs (awesome I may add) and we were having our devotion and weekly motivation/plan time. I shared that this week is all about staying motivated and "YES, YOU CAN!" The scripture is one of my favorites: Philippians 4:13 ~ "I can do all things through Christ who strengthens me."
After our talk, one of the kids came up to me and shared something with me that they were feeling guilty about....eating 2 molten cakes. Personally, I was jealous because I LOVE those things :), however I could see there was concern and guilt being felt about eating them. Sometimes all reason is not there for these kids.....but then again is it for me too? Justification about it being giving and not upsetting someone who gives you something, then not having it go to waste if no one else was going to eat it. I let him share all his thoughts and feelings and replied with:
I got the honest answer! This made me think about times I would "think" I was so hungry that I just had to have it, however it was often junk food and not clean healthy food.
You can say yes or you can say no....YOU have the choice!

Food is your FRIEND, not your enemy!
A battle with food is not a way to live. I have been there and now realize food is my friend. Do I ever have days I feel like I am losing??...holidays, parties and stress....YES! When I focus on that the food fuels my body to function and that cookie or treat will always be there tomorrow, I am able to stay on track with portion control.
Try and focus on eating 5-6 meals per day. You may be saying: EATING 5-6 MEALS PER DAY IS SO MUCH FOOD. I CAN’T EAT IT ALL!
The idea with clean eating is not to eat extra food, but to take the normal amount of food you eat (or should eat) and divide that into your 5-6 meals per day.
If you are struggling with the number of meals to cook and what to prepare, use your normal 3 meals for the day and then divide them in half and spread them out to every 2-3 hours. This is a great way to create a habit of eating every 2-3 hours and getting 5-6 meals in daily. I have even suggested to clients to set a reminder in you calendar to eat.
My typical day looks like this:
6-7ish ~ breakfast
9-10am ~ snack
12-1 ~ lunch
2-3 ~ snack
5-6 ~ meal
8 ~ snack if starving:)
Now is the time to have control of food and create that special friendship!!!

Choose Life!
We will never enjoy life unless we make a quality
decision to do so. Satan is an expert at stealing and our joy is one of
his favorite targets. Nehemiah 8:10 tells us that the joy of the Lord is
our strength. In John 10:10 we are told that "the thief" comes to kill,
steal, and destroy, but that Jesus came that we might have and enjoy
life. Satan is the thief, and one of the things he seeks to steal is our
joy. If he can steal our joy from us, we will be weak; and when we are
weak, the enemy takes advantage of us.
Weak believers are no threat to him and his work of destruction. In order to live as God intends for us to live, the first thing we must do is truly believe that it is God's will for us to experience continual joy. Then we must decide to enter into that joy. Experiencing enjoyment in our souls is vitally important to our physical, mental, emotional and spiritual health. Proverbs 17:22 says, "A happy heart is good medicine and a cheerful mind works healing, but a broken spirit dries up the bones." It is God's will for us to enjoy life! Now it is time to decide to enter into the full and abundant life that God wills for us.
Joy and enjoyment are available just as misery is available. Righteousness and peace are available and so are condemnation and turmoil. There are blessings and curses available, and that is why Deuteronomy 30:19 tells us to choose life and blessings.

Love: Your First Priority
1 Corinthians 12:31
Where does love fit into your list of priorities? Jesus said, "A new commandment I give to you, that you love one another; as I have loved you" (JOHN 13:34 NKJV). It seems to me that Jesus was saying love is the main thing on which we should concentrate. The apostle Paul states that "faith, hope, love abide . . . but the greatest of these is love" (1 CORINTHIANS 13:13).
Love should be number one on our spiritual priority list. We should study love, pray about love, and develop the fruit of love by practicing loving others. God is love, so when we walk in His love we abide in Him.
Because we walk in God's love by receiving and expressing it, we should not deceive ourselves into thinking we can love God while we hate other people (SEE 1 JOHN 4:20). It took me about forty-five years to realize that my priorities were mixed up and that I was not making love the main thing in my life. The commitment to learn how to walk in love has been the single best decision I have ever made as a Christian.

It's Okay to Laugh
Psalms 32:11 ~ "Rejoice in the Lord and be glad, you righteous;
sing, all you who are upright in heart!"
Many serious things are going on in this world, and we need to be aware of them and prepared for them. But at the same time we need to learn to relax and take things as they come without getting all nervous and upset about them. We need to learn how to enjoy the good life God has provided for us through the death and resurrection of His Son Jesus Christ (SEE JOHN 10:10). In spite of all the troubling things going on around us in the world, our daily confession should be, "This is the day the Lord has made. I will rejoice and be glad in it."
Something we Christians need to do more of is laugh. We tend to be so heavy about everything - our sin, expecting perfection from ourselves, our growth in God, our prayer life, the gifts of the Spirit, and memorizing Bible verses. We carry around such heavy burdens. If we would just laugh a little more - be of good cheer, "cheer up" - we would find that a little bit of laughter makes that load much lighter.
In the world we live in, there isn't a great deal to laugh about so we will need to do it on purpose. It is easy to find plenty to worry about. To be happy, we need to work on it a little. We need to laugh and have a good time.

Let Your Mess Become Your Message
2 Corinthians 3:18
I encourage people to let go of their past, but never to run from it. The only way to gain victory over the pain of our past is to let God walk us back through that doorway of pain and into victory. No one can achieve victory for us; we have to work out our own salvation. Paul explained this truth in his letter to the Philippian church, saying:
"Therefore, my dear ones . . . work out (cultivate, carry out to the goal, and fully complete) your own salvation with reverence and awe and trembling (self-distrust, with serious caution, tenderness of conscience, watchfulness against temptation, timidly shrinking from whatever might offend God and discredit the name of Christ). [Not in your own strength] for it is God Who is all the while effectually at work in you [energizing and creating in you the power and desire], both to will and to work for His good pleasure and satisfaction and delight" (PHILIPPIANS 2:12,13 AMP).
We have to let God take us through things and let Him work in us so our mess becomes our message. Difficult things that we have endured in our past prepare us for God's blessings in our future.

Willpower: The Fair-weather Friend
Galatians 5:16
Willpower sure sounds like a great thing. We are led to believe that we have enough of it to fight off every temptation that comes our way. And sometimes it works. But let me tell you a little secret about willpower. Willpower is your best friend when things go well, but it's the first friend to check out when you get weary. I have found that if I really don't want to do something, my mind gives me plenty of reasons why I don't have to. My emotions even join in, saying, "I agree because I don't feel like doing it anyway."
Our soul (mind, will, emotions) would love to run our lives, but the Bible says we are to be led by God's Spirit. We are never instructed to be willpower-led, we are told to be Spirit-led. Willpower and discipline are important and vitally necessary to a successful life, but willpower alone won't be enough. Determination gets you started and keeps you going for awhile, but it is never enough to bring you across the finish line. Zechariah 4:6 (NKJV) says, "Not by might, nor by power, but by My Spirit, says the Lord of hosts."
What happens if, instead of turning first to willpower in your time of need, you turn to God instead? God releases His power into your willpower and energizes it to bring you across the finish line. Willpower does not get the credit for our success, God does. Jesus said in John 15:5 (AMP), "Apart from Me [cut off from vital union with Me] you can do nothing." This is one of the most important and most difficult lessons we must learn if we want to enjoy the life Jesus died to give us.

The Ultimate Hope ~ day 4
WAITING FOR GOOD
Psalms 33:20
TALKING TO GOD
Thank God for planning good things for your family. Ask God to teach you to rely on Him even while you're waiting for those good things to come.
DIVING IN
Gather Popsicle sticks, white glue (not contact cement) and a ball of yarn. Create a cross by gluing two Popsicle sticks together. Wait patiently until the glue dries completely — this will take awhile. Then, spread a thin layer of glue on the sticks and wrap yarn around each section of the cross. You may need to untangle the yarn as you work. When the cross is completely decorated in yarn, tie the loose ends together.
GOING DEEPER
Waiting for the glue to dry and untangling the yarn were not the fun parts of the craft, but they were necessary parts. Consider how patience played a key role in finishing the cross. Noah followed God's directions for building the ark. Then he waited 40 days and nights for the rain to stop. The Israelites followed God through the Red Sea. Then they all waited 40 years in the desert before they saw the Promised Land. Being patient isn't easy. We often want to overcome challenges and problems as quickly as possible. But waiting for a breakthrough is easier when we put our hope in the Lord, knowing that in time He will bring good things — such as the rainbow and the Promised Land. We can strengthen our hope in God, and learn how to wait on Him, as we pray and read His Word.

PLUGGED INTO THE POWER SOURCE

TALKING TO GOD
Thank God that you can rely on His strength. Ask Him to show you how to rely on Him more.
DIVING IN
Place a drain plug in the kitchen or bathroom sink, and hold a dry tissue flat over the sink. Have each family member place one quarter on the tissue. Slowly drip water onto the tissue and count how many seconds it takes for the quarters to rip through. Repeat this activity using a washcloth in place of the tissue.
GOING DEEPER
Discuss the different outcomes from this activity. The tissue wasn't able to support the weight of the quarters for very long, but the washcloth never fell apart. It was strong enough. It's easy for us to feel strong when things are going well. But when things begin to fall apart around us, we can lose hope. Thank God that you can rely on His strength. Ask Him to show you how to rely on Him more.
DIVING IN
Place a drain plug in the kitchen or bathroom sink, and hold a dry tissue flat over the sink. Have each family member place one quarter on the tissue. Slowly drip water onto the tissue and count how many seconds it takes for the quarters to rip through. Repeat this activity using a washcloth in place of the tissue.
GOING DEEPER
Discuss the different outcomes from this activity. The tissue wasn't able to support the weight of the quarters for very long, but the washcloth never fell apart. It was strong enough. It's easy for us to feel strong when things are going well. But when things begin to fall apart around us, we can lose hope. THE BIG PICTURE
TALKING TO GOD
Thank God for giving you the blessing of hope on earth and in heaven.
DIVING IN
While it's easy for us to focus simply on the things around us, God always sees the entire story. Looking at life from our own limited view is like seeing the comic strip one frame at a time. Sometimes events in life may look disappointing. But we know that God sees the entire picture from beginning to end, and this knowledge gives us hope.
GOING DEEPER
Consider the disciples. While Jesus was on the Cross, His disciples must have felt confused and disappointed. They trusted that Jesus was going to be the Savior and King, yet He died. How could that be? God knew all along that Jesus would conquer death, but His suffering came before being glorified. Only after enduring three dark days without Jesus did the disciples start to understand the much bigger picture God had in mind. Because of Jesus' life, death and resurrection, our life in heaven is secure. We live with hope, not just for today, but for eternity.

Easter Eggs
Happy Easter Weekend! With Easter comes Easter eggs in our family. Here is a cute idea as well as a healthier version of making deviled eggs too. I hope you enjoy!
Healthier Deviled Eggs:
6 hard boiled eggs, peeled and cut lengthwise
1/4 C. nonfat plain Greek yogurt
2 tsp Dijon mustard
1/4 tsp pepper
1/8 tsp salt
paprika to garnish
Place eggs in a pot, add just enough cold water so that they are fully covered, and put on high heat. Add a little salt to the pot too ~ makes them easier to peel.
Cover and bring them to a boil, then turn off the heat and let them sit, still covered, for 12 minutes. Then they are ready! Rinse with cold water and let them sit a bit to cool down.
Once they have cooled, peel them and cut lengthwise. Place whites on a plate and the yolks in a bowl. Add the remaining ingredients (except for the paprika) to the yolks in the bowl, and mash it all together. Place the mixture back into the egg whites and top with a sprinkle of paprika....ENJOY!!

SHOES
I just received a favorite birthday gift....new running shoes! My feet are so happy too.:) I really try and change my shoes about every 6 months. This depends on how much wear and tear I am putting on them, and what type of training I am doing.
Right now I am really doing a lot of cross training with weights, running, elliptical, step mill and plyo~metrics. There really is not a "best" shoe for everyone, just like there is not a fitness plan for everyone, you need to find the best for you and your activity. Even if your shoe doesn't look worn out, it should be replaced anyway. Shoes will lose their support and protection for your joints and body. A good pair of shoes will probably cost between $75 to over $175. What you need to remember is you are worth it! Every time you forgo the fast food, put that money towards a good pair of shoes and see how fast your savings will grow!

Mexican Shrimp
I think I am going through Mexican food withdrawals from my vacation, so I had to try this shrimp dish I found! It is clean and super easy!! A win ~ win!!!
I LOVE shrimp because it is so convenient for a quick fix, healthy dinner....and you can get large bags of it frozen to have on hand all the time. I like getting the cooked, ready to go with only tails on version. All it takes is a few minutes thawing in some water and you are ready to eat or cook them up and create something different very easily.
Here is a quick fix idea:
(Makes 4 servings)
HEALTHY CLEAN MEXICAN SHRIMP

*1/4 teaspoon chili powder - 1 tablespoon olive oil (or any oil you prefer)
- Juice of 1 lime
Directions:
- In a skillet, cook the shrimp in the olive oil and sprinkle on the spices in the last few moments of cooking.
- Mix well and serve.
- Sprinkle the lime juice over the shrimp just prior to serving.

"Mock" Mashed Potatoes
Tonight I made "Mock" Mashed Potatoes. These were very tasty and I really couldn't tell they were not potatoes....they were made out of cauliflower. I did tweak it with omitting the butter. I adjusted the nutritional facts minus the butter.
Hope you ENJOY!
Ingredients
1 medium head cauliflower (I used frozen and micro)
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter (I DID NOT USE IT AND DID NOT MISS IT)
Directions
Set a stockpot of water to boil over high heat.
Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.
In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter ~OMIT
Hint: Try roasting the garlic and adding a little fresh
rosemary for a whole new taste.

Let Go and Let God!
Letting go and letting God is sometimes easier said than done. The amazing thing is that He is ALWAYS there for us! No matter if you are feeling anxious, tense, or concerned about anything in your life, when you turn it over to Him and allow His works to be done....God will fill your need. It may not always happen on our time, in fact there may be times we question if He even hears us. HE DOES! A feeling of peace and joy will carry you through every day when we "Let Go and Let God."

Brownies and a "secret" ingredient:)
BLACK BEANS! Yes, these brownies are made with black beans....thanks to a special friend who shared the recipe, I had to make a batch and see if it passed the hubby and kid test...IT DID!!!!
The only thing I wish I had more of was chocolate chips. I had a whole 7 chocolate chips in my freezer....yes "7" and I used every single one:) LOL
Black Bean Brownies
1 can black beans (15 ounces drained)
1/2 c oats
1/3 c Walden Farms Chocolate Syrup
4 Tbsp peanut butter
3 Tbsp unsweetened cocoa
1 Tbsp Truvia (or sweetener of choice)
2 tsp vanilla
2 tsp baking powder
dark chocolate chips to sprinkle on top
*Mix all ingredients except chocolate chips (I used a food processor till smooth)
*Pour into greased 9x9 pan and sprinkle with chips
*Bake in a pre-heated 350 oven for 15-20
*Cool and cut into 12 pieces
Macros per brownie: 90 Calories *4.4g fat(1.6g saturated) *10.3g carbs(2.7g fiber 2.5g sugar)

STRONGER ~ Wiping fear and doubt away
Last night I watched the 20/20 special on Robin Roberts. WOW! What an inspiration and faithful woman she is. I love how she shows such an inner peace during very difficult times. You can see that she has a strong faith and belief in God. Her attitude and determination helps her get through it all. She has defeated MDS and she is not allowing fear to overtake! The strength of her family is incredible. So touching about Robin knowing that her mommy is with her always and speaking words of encouragement from above. I got spirit bumps when I heard her sister tell her that daddy is on this side of you, mommy is on this side and God is right above you. How cool that her doctors pray for and with her too!
If we could all learn from her about not allowing fear or doubt to enter. Stay strong and know that every struggle in your life has shaped you into the person you are today ~ These hard times can only make you stronger!

FAT TUESDAY Family Favorite....Shrimp Creole
I decided to go for it and try a version of Shrimp Creole to go with my new fav...spaghetti squash!
Here it is:
1T butter
2T safflower oil
2T wheat flour
14 oz chicken broth
1 C water
1 1/2 C sliced celery
1 bunch green onion
1 red pepper
4oz tomato paste
Bay leaf
Salt and pepper to taste
1 tsp cayenne pepper (adjust to taste)
Red pepper flakes to taste
3 Cups of cooked shrimp
Heat butter and oil, add flour and cook for 5 min before adding all other ingredients. Bring to boil, then reduce to simmer covered for 30 minutes. A few minutes before serving add shrimp.
Serve with brown rice, pasta...or my new favorite spaghetti squash!
My family went nuts and told me that this was a keeper! YAY!!!
